This week we have an abundance of tomatoes so we’ll be using them in a couple of recipes. This week is centered around Italian/Mediterranean and Mexican inspired dishes which seem to be my munchkin’s favorite.

Sunday
Cellentani with Tomato Herb Sauce and Bruschetta
A new pasta sauce over these cool twisty noodles and our classic bruschetta recipe. However, instead of preparing the bruchetta as previously done, we’re going to just have the tomato mixture in a dish and the bread surrounding it, similar to the way it is served at restaurants to allow our guests to serve themselves easier.

Monday
Tomato and Herb Stuffed Zucchini
One of my own recipes, first time to try it so here’s hoping it’s tasty!

Tuesday
Cheese and Chili Tamales
These are our tamale recipe using just cheese and poblano chilis as a filling instead.

Wednesday
Spanakopita Triangles
We’ve made these before. They’re a little more involved than actual spanakopita but they’re portable and I think a bit tastier as you get the nice crispy nature of the baked phyllo dough all around the mixture.

Thursday
Cheese Enchilada Stack
An enchilada inspired casserole. Incredibly simple and easy to make.

Friday
Tortellini with a tomato-basil cream sauce
We’ve made this before and it is always highly received by our guests (and our munckin!) It’s very tasty and very easy.

Saturday
Creamy Burrito Casserole
Simple and delicious, this recipe does call for ground beef so we use Morningstar Crumbles.
