Note that this recipe is all dry ingredients, so you could also prepare it in jars to give away as a gift.

Prep Time: 5 minutes

Total time: 55 minutes

Serves 6-8

  • 3/4 cup lentils
  • 3/4 cup brown rice
  • 4 teaspoons bouillon
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon onion powder
  • 1/4 teaspoon garlic powder

  1. In a large saucepan, bring 4 cups water to a boil and add all dry ingredients.
  2. Return to boil.
  3. Reduce heat, cover, and simmer for 50 minutes. Water should be absorbed and lentils tender.
  4. Alternately, dump everything in a crockpot and cook on low for 6 to 8 hours.

To Serve on corn tortillas:

In a small frying pan, heat an inch of oil (we use olive oil) and fry the tortilla on both sides for about 30 seconds. Place on a paper towel to drain.

Serve with tomatoes, sour cream, guacamole, lettuce, salsa and any other toppings/condiments you enjoy!
