This week we went with some lighter dishes, more of a summer feel to the food, aside from the manicotti, but really it’s manicotti so I don’t think anyone will really complain.

Sunday

(We stole these from Chili’s but we use Quorn instead of chicken)

Monday

Baked Potato
Roasted Corn on the Cob
(RSVP for this one since the Potatoes take an hour to cook)

Tuesday

Tortellini w/ a light tomato-basil cream sauce
Bruschetta
(Sorry to say we use a store bought Tortellini as I am not a proficient enough cook to make my own, but we do make the sauce from scratch and it is awesome)

Wednesday

Roasted Rosemary Potatoes
Roasted Asparagus
(The rosemary has a sweet flavor that fits nicely with the lemony tang on the asparagus)

Thursday

Falafel Sandwiches in pita with Hummus
(Everything in this dish is made from scratch)

Friday

Chickpea and Black Bean Curry
Served on Rice

Saturday

Spinach and 4-Cheese Manicotti
Served with Buttery Rolls
