Note that this recipe is all dry ingredients, so you could also prepare it in jars to give away as a gift.

- 3/4 cup lentils
- 3/4 cup brown rice
- 4 teaspoons bouillon
- 2 teaspoons chili powder
- 1/2 teaspoon cumin
- 1 teaspoon onion powder
- 1/4 teaspoon garlic powder
- In a large saucepan, bring 4 cups water to a boil and add all dry ingredients.
- Return to boil.
- Reduce heat, cover, and simmer for 50 minutes. Water should be absorbed and lentils tender.
- Alternately, dump everything in a crockpot and cook on low for 6 to 8 hours.
To Serve on corn tortillas:
In a small frying pan, heat an inch of oil (we use olive oil) and fry the tortilla on both sides for about 30 seconds. Place on a paper towel to drain.
Serve with tomatoes, sour cream, guacamole, lettuce, salsa and any other toppings/condiments you enjoy!
